Sourcing policies

The purchasing team in Morpol is extremely knowledgeable about fish and what characteristics represent the best quality for processing. Our policy is to purchase farmed Atlantic salmon from Norway and Scotland meeting the specifications for Superior Quality classification. Currently we are assessing farming protocols with the intention of producing salmon optimised for smoking.

Wild fish sourced by Morpol must again be of high quality and they must be sourced from fisheries certified as sustainable by the Marine Stewardship Council.

Traceability

Our traceability system enables us to trace back from the final pack to details of how and when we processed it, and back again to the original suppliers with specific batch numbers and dates. The origin of all ingredients is recorded on arrival. They are tracked through the entire process together with information on dates, times, destinations and customers, all linked with the final product lot code.

Salmon smoking

Fillets are trimmed to produce a high quality product ideal for smoking and slicing. Salting and storing in controlled temperature and humidity conditions draws out moisture and preserves quality. Drying in specially designed rooms further enhances texture, colour and consistency. Cold or hot smoking using locally sourced sustainable beech chippings gives our salmon its distinct and delicious flavour that is winning customers across Europe and beyond.
